210g plain flour
½ tsp mixed spice
30g caster sugar
130g hard butter cut into small pieces
1 egg yolk
3-4 tsp water
Put almonds in TM bowl and mill for a few seconds on speed 8.
Add flour, butter, caster sugar, spice and salt and mix for approx 10 secs on speed 6 until mixture resembles breadcrumbs.
Add egg yolk and water and mix on interval speed for 10-20 secs to form dough.
Turn onto floured board and knead lightly.
Cover pastry and put into fridge for about 15 mins before rolling out and cutting into rounds to place into tart tins.
Bake at 200º until golden brown (approx 10-15 minutes).
These tart shells can be made in advance and used with a great variety of fillings.
