Apple Pie (rich shortcrust pastry)

Ingredients

6 large x Organic Apples (green or red) peeled, cored and quartered

Cinnamon or cloves (to taste)

¼ of cup Raw Sugar

Rich Short Crust Pastry

160gms Butter softened

110gms Raw Sugar

300gms Plain or Spelt Flour

2 x Egg yolks

3 x Tbsp Iced Water

1 x tspn Vanilla Extract

Method

Place apples in Varoma Tray with 500ml of water in TM Bowl for 15minutess on Varoma speed 4 set aside and allow to cool

Preheat oven 180˚

Place sugar in TM bowl 40 seconds on speed 9

Add Butter vanilla extract and eggs 3 minutes on speed 4 scrape down sides of bowl

Add flour and Water and mix 2 seconds on speed 7

Knead for 1 minute on wheat symbol (until dough is formed)

Wrap dough in glad wrap and place in the fridge for 20 mins

Halve and roll dough out between 2 sheets of grease- proof/baking paper (use extra flour if too sticky)

Line pie plate with pastry

Add Apples and sprinkle with raw sugar and cinnamon to taste

Roll the rest of the dough out between 2 sheets of grease- proof/baking paper

Lay pastry over apples push down edges and trim off excess

Cut 4 x slits in top of pie and brush with milk

Bake for 10 mins at 210˚ then at 180˚ for a further 30mins

Tip: Left over pastry can be turned into Jam Tarts Use j Jam or lemon butter made in Thermo mix Bake at 180˚ for a further 10mins

    This was super easy.

    I substituted egg yolk with 2tsp chia seeds mixed with 2 tbls water and let sit till gel forms.

    Also used nuttelex in place of butter for dairy allergy.

    Also honey in place of sugar on apples just because I had no sugar left.

    It tasted fantastic!

    Just made this and it was devine. My whole family loved it. Best apple pie ever!

    I’m not very experienced with pastry, but it was easy enough to work with and came back together perfectly to hide my mistakes.

    OMG – best short crust for apple pie ever. My daughter was content to just eat the pastry. I rolled mine between two sheets of glad wrap. This way you can keep an eye on what your doing without having to keep lifting the grease proof paper up to check on thickness.

    Steph, I made this recipe into mini apple pies using my TM and white spelt flour. I made 8 mini pies which I put into a muffin tin. I already had some stewed apples which I added sultanas to. I only used 40gms of raw sugar in the pastry too. The apples are sweet enough for me.The pastry was super soft and I estimate I used an extra 100gms of spelt flour. I don’t know how to link up a pic for you but wanted to let you know that I tried this recipe, love apple pie but I do not buy commercial ones due to poor quality ingredients used and i also made an absolute mess with flour in the kitchen! Thanks for sharing. Jo

    I got this quality recipe from Nat Mahoney, I’m currently working my way through Jude Blereau’s new baking book.. which looks like a winner too!
