1 qty Almond Pastry from ‘Everyday Cooking’ cookbook
Zest 1 orange
750g pears, peeled, cored and chopped
100g craisins (dried cranberries)
50g glace ginger, chopped
60g flaked almonds
Juice 1 lemon (20-25g)
Juice 1 orange (65-75g)
1 tsp each ground cinnamon, cloves, nutmeg, cardamom
2 tbsp brandy (optional)
Place orange zest into TM bowl and mince for 10 seconds on speed 7.
Add pears and sugar and chop for 2-3 seconds on speed 6.
Add remaining ingredients and cook for 35 minutes at Varoma temperature on Reverse + speed 1. Cool slightly, stir brandy through and set aside until ready to use.
Roll pastry into large flan tin or press into smaller tart cases. Top with fruity pear mince and cover with pastry stars – use extra pastry to decorate each tart. Brush with a little beaten egg.
Cook in hot oven at 200°C for tartlets, or 20 minutes for large tart.
Cool and dust with icing sugar and serve with custard.
