50 g tasty cheese cubed
1 Onion peeled and quartered
1 Clove of garlic
20g olive oil
500gr chicken breast sliced in thin stripes
2 cans of Borlotti beans drained and rinsed
2 tbsp TM Vegetable stock concentrate
Salt and pepper
Handful coriander leaves
1 packet of 10-12 corn tortillas
100ml sour cream
Place cheese into TM bowl and grate for 10 seconds on speed 9. Set aside
Place onion and garlic in TM bowl and chop for 5 seconds on speed 7.
Add olive oil and sauté for 2 minutes at 100°C on speed 1.
Place chicken on Varoma Tray and season with salt and pepper
Add beans, water and stock concentrate to TM bowl, place Varoma tray in position and
cook for 20 minutes at Varoma temperature on speed 1.
Remove chicken and place into ThermoServer.
To make the bean sauce, add fresh coriander and blend beans for 15-20 seconds by
slowly going from speed 1 to speed 9.
Heat tortillas one by one on a dry and hot frying pan or in microwave oven. Keep them
warm by wrapping them in a tea towel.
To make Enfrijoladas: Dip one tortilla at a time in the bean sauce until fully covered and
place in an oven proof dish, add some chicken and fold in half, continue until all 12
tortillas have been used making sure chicken has been evenly used.
Pour remaining sauce over the enfrijoladas, pour sour cream and sprinkle with grated
The above recipe can be prepared in advanced and place in hot oven to melt cheese.
