Chunky Cashew, Basil and Parmesan Dip (TM converted)

1 Garlic clove
10gms Parmesan cheese
100gms Raw cashews
5gms Basil leaves
15-30gms of Grapeseed oil
1 tsp white vinegar
¼ tsp Celtic salt


Grate parmesan cheese for 15 secs on speed 8 remove cheese and set aside
Crush garlic on speed 7 for 5 secs scrape down sides of bowl
Add Cashews chop on speed 4 for 40secs-1minute to desired texture
Add Parmesan cheese, Grapeseed oil, Vinegar, Basil, Celtic salt and mix for 20secs on speed 2
If Basil not chop enough chop for 5 secs on speed 5
Enjoy with Jatz crackers

    Does this recipe really call for 5gm of basil leaves or is that a typo?!

    This should serve a good 4 to 6 people but hard to tell! It’s very moreish, I normally serve as part of a trio of dips, the colour is sensational.

    I have made this recipe twice now – I have only had my Thermomix for a few weeks. It is really easy and really yummy. Everyone who has tasted it has said its a winner. Fresh and flavoursome.
