Strawberry Jelly

Ingredients

500gms fresh strawberries (hulled)

150gms raw sugar

100gms apple juice

4 gelatine leaves

Method

Chop strawberries on speed 5 for 3 seconds.

Add sugar. Cook for 20 minutes at 80°C on speed 1.

Sit for 5 minutes.

Strain using steamer basket into separate bowl without forcing. (Reserve pulp,

freeze and use for your next batch of muffins).

Soak gelatine leaves in cold water for 5 minutes, then squeeze out water.

Return strawberry liquid to TM jug. Add apple juice and cook for 4 minutes at

80°C on speed 1.

Add gelatine on speed 5 for 20 seconds.

Set in fridge for up to 3 hours.

    Kate presented this dish at our branch meeting in gorgeous animal shapes. (Wish I had taken a photo to share) Should you wish to cut out shapes into this jelly you will need to add more gelatine to get a firmer texture.
