These little tasty bites are just like savoury cheese balls, but are made from nuts – perfect for “raw foodies”, vegans, those with dairy allergies, and anyone else.
120 g macadamia nuts – soaked in water for a few hours first
120 g cashew nuts – soaked in water for a few hours first
a good pinch of fine himalayan salt or sea salt
juice of half a lemon
1 clove garlic, peeled
a few fresh chives
Drain soaked nuts and discard soaking water. Blend all ingredients at Speed 10 until the mixture is creamy, about 30 seconds, pausing to scrape down the sides of the TM bowl once or twice. Scrape out the mixture and form into little balls or flatten into a disc. Refrigerate and enjoy withcrackers or sandwiched between two slices of beef steak or tomato. If there’s anyleftover (unlikely!), wrap in greaseproof paper before storing in fridge.
