This recipe comes from my gorgeous customer Sally Thomas, many thanks Sally!
1 large round of brie
½ cup dried apricots
2 Tablespoons brown sugar
2 Tablespoons water
1 teaspoon balsamic vinegar
1 sprig rosemary leaves (stripped) or ¼ teaspoon dried rosemary
½ cup chopped walnuts
Put all ingredients except for cheese in Thermomix and use the Turbo button to blitz 2 or 3 times.
Put Brie on large piece of foil and pile apricot mixture on top.
Bring the foil up to make a parcel.
Bake in an oven at 180C for 10 minutes till Brie is melted in middle.
Can also be steamed in the Varoma if desired
Serve with apples & crackers or crusty bread as a dip or entree
