Peanut Cream – Fa Sang Wu

Ingredients

300g toasted peanuts

1100g water

140g-150g sugar

1-2 tbsp (15-30g) rice flour – to thicken, if needed

Method

Cook peanuts with 600g water for 10 minutes at 100ºC on speed 2.

Place MC at an angle to prevent splashing.

Pulverise for 2 minutes on speed 9.

Add the rest of the water, sugar (and rice flour, if using) and continue to cook for 5-10 minutes at 80 deg on speed 4, or until thickened.

Serve hot.

    Wow, what an appealing recipe! Is this a dessert then? Was it like custard? (I WILL try it, but just wondering about the final consistency.) What happens if you don’t serve it hot? Maybe we could make peanut ice cream! Oh wow! Thanks Steph!
