WHITE CHOCOLATE, ALMOND & RASPBERRY BLONDIE

Amanda passed this recipe on to me when I was feeling unwell.  It looks amazing and can’t thank you enough Amanda for sharing it!

Ingredients

100G ALMONDS

185G BUTTER

450G WHITE CHOCOLATE BITS

250G RAW SUGAR (PRE MILLED TO CASTER SUGAR)

3 EGGS, LIGHTLY BEATEN

150G PLAIN FLOUR

150G SR FLOUR

150G FROZEN RASPBERRIES

SIFTED ICING SUGAR, FOR SERVING

Method

Preheat oven to 200C. Line a standard baking tin with Gladbake & put aside.

Turbo Almonds a couple of times & put aside. (no need to clean bowl)

Melt 225G White chocolate & butter 90C for 5 mins on speed 2.

Add eggs & sugar & mix for 25 seconds on speed 6.

Add flours & pinch of salt & mix for 6 seconds on speed 5.

Add almonds, 225G white chocolate bits & frozen raspberries & combine for 10secs on speed 1.

Pour into tin & cook for 20mins (turn around after 10mins to ensure even cooking). Keep checking, the blondie is ready when it has a firm crust on top but a toothpick inserted in the top comes out quite wet & gooey. Remove from oven & allow to cool completely on a wire rack.

Dust with icing sugar!!
