Chocolate Molten Cakes (Individual) Moelleux au Chocolat “Kitu”

Serves 6


150gm Unsalted Butter

150gm Dark Chocolate (70% Cocoa/Chocolate QUALITY is Essential)

Good pinch of course Sea Salt

2 Eggs

2 Egg Yolks

60gm Sugar

1 Tablespoon Plain Flour


Preheat oven to 220ºC.

Grate chocolate in TM bowl 5 secs/Speed 8

Add Butter- Melt 2 mins/50ºc/Speed 2

Set chocolate/butter aside.

Put eggs/egg yolks & sugar into TM bowl.

Mix 30 sec/Speed 5

Add chocolate/butter mixture into egg mixture & combine

10sec/Speed 5

Add flour- mix 3sec/Speed 4

Pour batter evenly into individual silicon moulds or other mould of choice

(Can make the cakes in advance to this point and chill until ready to bake,but bring batter back to room temp. before baking)

Baking time will depend on your oven;start with 7 minutes for a thin outer shell with a completely molten interior,

8 minutes for a slightly thicker crust and a gooey heart.

Tip These also cook well straight from the freezer.Take out of the freezer about 10 minutes in advance. Bake at 200ºC for approximately 15 to 17 minutes.
