Creamy Zucchini Soup

Serves 6-8

Ingredients

25gm unsalted butter

1 onion, peeled & cut into 4

1 small clove garlic

1 carrot,peeled & sliced

1 stick celery, chopped

1 large potato,peeled & cubed

6-8 small zucchinis, cut in half lengthways & sliced

1.25 litres good chicken stock (see recipe p.18 Everyday cookbook)

salt & pepper

2 Tablespoons pouring cream (or crème fraiche)

Method

Chop onion & garlic in TM bowl 5sec/speed 7

Add cubed butter & sauté onion/garlic 3mins /100ºc/speed 1

Add carrot,celery & potato. Chop 5secs/speed7

Add zucchinis and chicken stock . Cook 15mins/100ºc/speed 1,or until all ingredients are soft.

When cooked, blend for 15-20secs by slowly going from speed 1 to speed 9.

Season with salt & pepper,adding the cream before serving.

When serving, you could add a few snipped chives or fresh thyme leaves , and if feeling indulgent, an extra dollop of cream first!
