Chicken & Ricotta Sausage Rolls with Lemon Mayonnaise

400g Chicken Breast cut into strips partly frozen

200g Smooth Ricotta Cheese

50g Bread Crumbs

2 Cloves of Garlic

1 Handful fresh Basil

½ Bunch of fresh chives

2 Sheets of Puff Pastry

1 Egg white

Salt and Pepper to taste

Poppy Seeds


Place 2 slices of bread in the freezer and allow to partly freeze, about 1 hour.

Break bread into pieces and chop 3sec Sp 6. Set aside.

Place Garlic, Basil and Chives in bowl and chop 2sec Sp 7

Put chicken pieces (partly Frozen) into bowl and chop 10sec Sp 7

Add Ricotta and breadcrumbs and mix 20secs Sp3 with the aid of the Spatula.

Cut Pastry sheets into 2 lengthways.

Place mixture on edge of each sheet and roll up to enclose the filling.

Place rolls seam side down on baking tray and brush with egg white and sprinkle with poppy seeds. Cut each roll into 6 pieces.

Bake in pre heated oven 200deg for 35mins.

Lemon Mayonnaise.

Peel a lemon and zest on Sp9 for 30sec then make TM Mayonnaise as per Every Day Cook Book using lemon juice not vinegar.
