Butter Oat Snaps

Recipe contributed by Annie Frazier, TM Consultant VIC from her gogetters presentation – Annie says great minds think alike and converted a recipe from her Mum’s cookbook that is the same as the Anzac Bikkies in the Everyday Cookbook – Annie uses Honey instead of Maple Syrup… Yummy!!!

Ingredients

110g Rolled Oats

150g Plain Flour

75g Coconut

140g Raw Sugar

125g Butter

2 Tablespoons Honey

2 Tablespoons Water

1 Teaspoon Bicarbonate of Soda

Method

Melt butter 2.5mins 60Deg Sp 2

Add Bicarbonate, honey and water Mix 5sec Sp 4

Add the Rolled Oats, the Plain Flour, the Coconut and the Raw Sugar, combine mixture 12 sec Sp 3.

Roll mixture into balls, place on baking tray and cook in pre heated oven to180degrees for 10 mins or till golden.

Cover blades with water and steam clean for 10mins Varoma Sp 4.

    My daughter and coconut aren’t the best of friends, so am substituting with same amount of polenta…wait and see how it goes…

    Polenta worked a treat: biscuits were quite crunchy and my daughter, who normally wouldn’t eat them because of the coconut, is now annoying me for more!
