Geena’s Quick Orange & Almond Cake

Recipe by Geena Di Stefano, TM Consultant VIC – Geena evolved this recipe from the Everyday Cookbook and Donna Hay to it;s current form.  This cake is moist but light and sprinkled with icing sugar would be fit to serve in any cafe!  Thanks Geena!

Ingredients

2 Oranges

3 Eggs

110g Almonds

1 cup of self raising flour

1 cup of raw sugar

125g butter soften or at room temperature

Method

Pre-heat oven to 180°C

Grease a cake tin with either butter or oil.

Place the almonds into the TM bowl and mill for 14 seconds on speed 9.

Remove and place into another bowl.

Grind the raw sugar into caster sugar for 3 seconds on speed 9.

Remove and place into a separate bowl.

Wash oranges and cut them into quarters. Place the oranges in TM bowl. Chop the oranges for 7 seconds on speed 9.

Add all the remaining ingredients – caster sugar, butter, eggs, flour and almond meal. Mix for 8 – 12 seconds at speed 7.

Add the mixture into a cake tin and bake for approximately 1 hour.

Let the cake cool down and dust with icing sugar before serving.

Topping Suggestions

Served warm with either cream or ice-cream.

Add fresh strawberries.
