Banana Nut Bread

Ingredients

• 1 ripe banana

• 8 eggs

• 110g coconut milk

• 70g sugar

• ½ tsp vanilla essence

• ½ tsp almond essence

• ½ tsp salt

• 90g coconut flour

• 1tsp baking powder

• 40g pecans or walnuts

Method

Add nuts to TM bowl, turbo 1 second and set aside.

Blend remainder of ingredients, Speed 5 for 30 seconds. Add in nuts for 10 seconds on Reverse + Speed 2.

Pour into greased loaf tin and bake at 1750C for 50 minutes. Remove from tin and cool on rack.

    Where can I get coconut flour?

    Try your local health foods… I have to say I couldn’t be bothered, i just used the shredded coconut and blitzed it on speed 9 for about 20- 30 seconds and used that.
