250g Copha cut into 4 pieces
140g White sugar
100g Glace Cherries
100g Dried Apricots
85g Desiccated Coconut
106g Full Cream Milk Powder
40g Rice Bubbles
Place sugar into TM bowl and mill for 3 seconds on speed 9, set aside.
Place glace cherries and dried apricots into TM bowl and chop for 3 seconds on speed 8, set aside.
Place copha into TM bowl and melt for 2 minutes at 70C on speed 2.
Add all other ingredients to the TM bowl and mix for 10 seconds on reverse speed 5.
Transfer the mixture to a prepared pan and firmly press using the spatula.
Cover and refrigerate until cold.
Cut into squares to serve or wrap in cellophane for gifts.
Store in an airtight container in the refrigerator.
