ABSOLUTELY MOORISH MINI FRUIT MINCE TARTS

Ingredients:

• 1 cup plain flour

• 125 g butter, chopped

• ½ cup sugar

• 1 cup fruit mince (use a good quality mince or make your own)

• ½ granny smith apple, finely grated

• Extra icing sugar to dust

Method:

1. Grease 16 holes of 2 x 12 hole mini muffin pans.

2. Mill sugar 10-15 seconds speed 9.

3. Add flour & butter & pulse 2-4 times until mixture comes together and forms a ball.

4. Remove dough and divide into 16 balls, press into prepared holes and use the wrong end of a wooden spoon to make deep indentations in the balls. Do not go all the way through.

5. Cover and refrigerate for 30 minutes. (This is a very short pastry and must be cold before cooking).

6. Combine fruit mince and apple, then spoon into holes.

7. Cook in a moderate oven (170C) for about 20 minutes or until pastry is lightly browned and cooked through.

8. Cool in pan for 10 minutes before transferring to a wire rack to cool completely.

9. Serve dusted with extra sifted icing sugar and watch them disappear!

Tips:

• These are also excellent as mini lemon tarts. Replace fruit mince with 1/3 cup lemon curd from Everyday Cooking and replace apple with the flesh of 1 passionfruit.
