WHITE CHOCOLATE, ALMOND & CHERRY BLONDIE

Ingredients:

• 70 g flaked almonds

• 125 g butter

• 200 g white chocolate bits

• 215 g raw sugar (pre milled to caster sugar)

• 100 g red glace cherries, halved

• 100 g green glace cherries, halved

• 190 g plain flour

• 2 eggs

Method:

1. Preheat oven to 160C. Line a 16 x 26 slab pan with Gladbake, allowing the sides to overhang & put aside.

2. Melt white chocolate & butter 90C for 5 mins on speed 2.

3. Add eggs & sugar & mix for 15 seconds on speed 6.

4. Add flour & mix for 10 seconds on speed 5.

5. Add cherries and mix on reverse, speed soft for 10 secs to mix through

6. Pour into tin & smooth the surface with the back of a spoon. Sprinkle top with the flaked almonds.

7. Bake for 40-45 mins or until a toothpick inserted in the centre comes out clean.

8. Leave in the pan to cool then move to a wire rack before cutting into pieces.

Tips:

• Blondie is suitable for freezing up to 4 months wrapped in 2 layers of plastic wrap. Unwrap and thaw overnight at room temperature.
