CHICKEN WITH SPICES IN BANANA LEAF ( Base Bali)

1 X CHICKEN BREAST (approx. 400G)

3 TBL BASE MEGENEP PASTE

3 KAFFIR LIME LEAVES, THINLY SLICED

1 SPRIG LEMON BASIL

1 TOMATO ROUGHLY CHOPPED

1 TBL PALM SUGAR, Grated

JUICE OF 2 LIMES

SALT

BANANA LEAVES, WASHED + BAMBOO TOOTHPICKS

Method

Cut chicken into 6 pieces & mince on Turbo 4-5 times. Place in bowl.

Mix with Base Megenep, Basil leaves, kaffir lime leaves, tomato, palm sugar,

lime juice & salt.

Cut six 25 x 20cm pieces from banana leaves. Place a tblsp of chicken mixture on each leaf. Fold both sides of the leaf over the filling. Fold the open end over & secure the parcels with bamboo toothpicks.

VAROMA METHOD

SET UP YELLOW RICE.

ADD CHICKEN PARCELS TO VAROMA DISH.

COOK FOR 10MINS AT VAROMA TEMP ON SPEED 4.

PLACE WATER SPINACH ON TRAY IN VAROMA & CONTINUE COOKING 7 MINS AT VAROMA TEMP ON SPEED 4.

PRESENTATION IDEAS:-

MOLD RICE IN DARIOLE RAMIKEN ONTO PLATE & GARNISH WITH THINLY SLICED RED CHILLES.

OPEN CHICKEN PARCELS AROUND RICE WITH FRESHLY CUT LIME WEDGES.

MIX WATER SPINACH WITH SAMBAL PELECING & GARNISH WITH CHOPPED ROASTED PEANUTS OR SHREDDED COCONUT OR FRIED SHALLOTS.
