This wonderful recipe comes from Kyeema Fanning, you may know her from the Avacado Dip and beautiful Almond and Cranberry bread contributions on this website. She handed me this recipe with the name of it “High Protein Salad” then promptly said what I was thinkng … the name is all wrong.. it’s like a savoury CADA!!! so here it is. Made it tonight…. STUNNING!!! But of course anything from Kyeema is guaranteed yummy!

2 cups raw almonds
1/2 cup of sunflower seeds
1/4 cup fresh coriander (well washed)
1/2 small red onion, quartered
1 punnet of cherry tomatoes
1/2 cucumber, chopped
1/4 cup extra virgin olive oil
Herb Salt to taste
Place everything into Thermomix, lock lid and pulse (turbo) once or twice until a chunky consistency is achieved!
