200g Aduki beans – soaked overnight
5cm piece of kombu sea vegetable
4 slices of fresh ginger
400 –600 g of butternut pumpkin cubed
2 medium carrots peeled and cut diagonally in 2-3cm pieces
1corn cob, corn cut of the cob
‘1 tblspon of Tamari
2 spring onions chopped
400ml of water
Drain the beans.
Place ginger onto the TM Bowl. Chop for approx 10 sec on Speed 9
Add beans, kombu, and water (water should cover the beans and come aprox 2cm above them. Cook 10 minute 100C Speed 1, reversing the blades
Add pumpkin, carrot and corn and cook 20 to 25 minutes 100C speed 1 (reverse Blades) add tamari, parsley and spring onion and mix 5 seconds Speed Soft (reverse Blades). Serve with brown rice or millet.
If you cooked brown rice before save the water left from cooking and use it in the stew instead of the water.
