Chocolate Frangipane Croissants

6      1 Day old croissant

110 grams blanched almonds

200g dark chocolate

250 grams unsalted butter

drizzle almond essence

1/4 cup icing sugar

flaked almonds to finish

SYRUP made from 1 cup water and 1/2 cup caster sugar brought together until sugar is dissolved

Preheat oven to 160 degrees.

Cut croissant in half and lay in baking dish.

Place almonds into Thermomix bowl and mill for 8 seconds on speed 8.

Add chocolate and mill a further 8 seconds on speed 8.

Add butter, icing sugar, essence and egg and pulse together in the Thermomix.

Mixture should be chunky and textured, as opposed to smooth!

When blended spoon onto croissant half and top with other half.

Pour syrup over and allow to soak in.

Sprinkle with flaked almonds and bake until golden. (Around 20 minutes)

Serve whilst warm.
