Chocolate Pudding Surprise

From The Full Steam Ahead Cookbook

Ingredients:

2 eggs (60g) 1 tbsp vanilla sugar

1 pinch salt 4 cherry pralines, e.g. Mon Cheri

40g dark chocolate, cut into pieces 500g water

40g butter, soft, plus some extra

40g marzipan base mass, cut into pieces

Preparation:

1. Insert butterfly

2. Separate egg white from egg yolk, place egg white and 1 pinch of salt into mixing bowl, beat

2 min/speed 3.5 until stiff. Transfer into a large bowl and set aside

3. Remove butterfly

1. Place chocolate into mixing bowl, grind 5 sec/speed 8 and melt 2 min/60ºC/speed 2

2. Add butter, stir well 30 sec/speed 3.5

3. Add marzipan base mass, vanilla sugar and egg yolk, stir 30 sec/speed 5 until creamy

4. Add chocolate mixture to beaten egg white and carefully fold in with spatula. Place mixture into

4 buttered and sugared souffléé dishes and slightly press a cherry praline into each one. Cover

each dish with cling film and place them into Varoma receptacle

5. Clean mixing bowl. Pour water into mixing bowl, place Varoma into position and steam

20 min/Varoma/Speed 1

6. Set Varoma aside, remove Varoma lid and let soufflé dishes cool down for 5 minutes. Carefully

remove soufflé dishes from Varoma with a dish towel, unwrap cling film, then place them upside

down onto places. Serve warm.
