Chocolate Salami

80gm unsalted butter

200gm bitter chocolate (70%)

100gm icing sugar

200gm digestive biscuits

80gm chopped almonds

80gm dried cranberries

80gm pistachios 2 egg yolks

80gm of port wine

2ml vanilla essence

80gm condensed milk

Pinch of salt

Cocoa powder to decorate


Place almonds in TM bowl and chop on speed 7 for 5 seconds. Add the cranberries and pistachios and then add crushed biscuits (small pieces, not crumbs).

Pour ½ of port wine over the mixture and fold together, then set aside.

Melt the butter for 2 minutes at 50 degrees at speed 2. Add the chocolate and melt for 3 minutes at 50 degrees, speed 2.

Add the egg, salt, icing sugar, condensed milk, vanilla and the rest of the port wine and set the timer for 6 minutes at 50 degrees, speed 2.

Let the mixture cool for 10-15 minutes before mixing with the biscuit mixture.

Mould into a salami shape with a double layer of cling wrap.

Let the chocolate salami set in the fridge.

Remove the cling wrap and then roll the salami in cocoa powder.

Now ready to serve with coffee or your favourite ice cream.

Makes 2 x 420gm chocolate salamis.

Can be shaped into a Xmas Bon Bon for a delicious present.
