Barbecue Sauce

Extracted from the “Monthly Mouthfuls January Newsletter”  by Kathryn Anthony


2 cloves garlic

1 brown onion peeled and halved

1 red apple cored and halved

400g ripe tomatoes halved

3 ripe plums, washed and de-stoned

100g brown sugar

1 tablespoon smoky paprika

2 tablespoons Worcestershire sauce

2 tablespoons tomato paste

100g apple cider vinegar

2 tablespoons treacle

1 bay leaf


Place garlic, onion and apple into TM bowl and chop for 3 seconds on speed 7.

Add tomatoes and plums and mix for 30 seconds on speed 7.

Add all other ingredients and cook for 30 minutes at 100ºC on speed 1 with MC in place.

To thicken sauce cook for another 14 minutes at Varoma temperature on speed 1. To reduce spatter, but allow reduction of liquid, replace MC with steamer basket.

Remove bay leaf, and blend for 1 minute on speed 8. Pour into hot sterilized jars.

    I made this sauce today, but as it was a spur of the moment thing, I didn’t have 400g fresh tomatoes, so used tinned Italian tomatoes. In one batch I used golden syrup because I ran out of treacle in the first batch and both batches were delicious. I will definitely try it with fresh tomatoes at some stage, but good to know you can use tinned at a push.
