Cashew Pesto – Raw

Ingredients

• 1 clove garlic

• 160grams raw cashews

• 1 bunch basil

• Good handful of rocket and spinach

• 1 tsp tamari\1/2 tsp celtic sea salt

• Juice of ½ lemon

• 80 – 125 mls of olive oil (judge by the texture)

Method

Add garlic to TM Bowl and chop, speed 5, 3 seconds

Add cashews and chop, speed 5 for 3 seconds.

Add all other ingredients and process, speed 5 for 5 seconds, using spatula to assist. Add more oil if necessary.

Serve with vegetables or raw bread
