Take Some Cream Cheese…

From the 2009 Christmas Cooking Classes

If you always have cream cheese in your fridge and a few of the pantry staples below, (check our list twice) you will always be prepared over the festive season if unexpected guests drop in!

Ingredients

Each dip requires 250g cream cheese to which you add;

Crab Dip

¼ red onion

180g tin crab meat

Drizzle milk

Salt, pepper and paprika to taste

Dash Worcestershire sauce

Juice 1 lime

Salmon Dip

3 spring onions

200g smoked salmon

1 tbsp capers

Salt and pepper to taste

Juice 1 lemon

Roasted Pepper Dip

1 clove garlic

Few sprigs fresh thyme

0.1 roasted, peeled and deseeded red capsicum (or equivalent jar drained)

Dash cayenne pepper

Dash nutmeg

Salt to taste

Artichoke Dip

80g grated Swiss cheese

1 clove garlic

2 spring onions/shallots

1 small drained jar marinated artichoke hearts

Drizzle cream as needed

Sea salt and pepper to taste

Method

Process dry cheeses if used first by milling for 6-8 seconds on speed 9. Set aside until blending process.

Add the herbs, garlic or chillies and chop for 5 seconds on speed 6.

Add all remaining ingredients including cream cheese and blend for up to 10 seconds on speed 5-6. Scrape down sides of bowl if necessary and repeat blending process.

Decant into serving bowl and refrigerate until served with crackers, breads, crudités etc.
