Converted from “Steam It” by Murdoch Books
350gms sweet potato, roughly chopped into small cubes
1 tbsp Olive oil
¼ or ½ small red onion
1 clove garlic
1-2cm piece ginger
1 tbsp TM Red Curry Paste (Everyday Cookbook)
200gms of tomatoes
125gms red lentils, rinsed
1 tbsp TM vege stock
Salt and pepper to taste (if required)
Place onion, garlic and ginger into bowl and chop speed 7 for 3 secs, scrape down sides.
Add oil and curry paste, sauté 3 minutes at Varoma Temp on speed 1.5.
Add tomatoes to bowl and chop 5 secs on speed 5.
Add lentils, vege stock and water to bowl.
Place sweet potato in rice basket and insert into bowl.
Cook for 15 mins, 100, reverse speed 2. After 7 mins reduce temp to 80 (press 80 degrees and temp will reduce).
Remove basket, add sweet potato, pinch of salt and freshly ground black pepper to other ingredients. Mix gently Reverse speed 2/3.
Pour into a bowl and refrigerate, it will thicken as it cools.
Serve with Pitta Bread Wedges, savoury crackers or crusty bread.
Can be served hot as a main meal with rice and pappadums. Or use as a side dish with your favourite curry.
Adjust curry paste to your chilli taste buds.
