Sweet Potato and Red Lentil Dip

Ingredients

350gms sweet potato, roughly chopped into small cubes

1 tbsp Olive oil

¼ or ½ small red onion

1 clove garlic

1-2cm piece ginger

1 tbsp TM Red Curry Paste (Everyday Cookbook)

200gms of tomatoes

125gms red lentils, rinsed

1 tbsp TM vege stock

375gms water

Salt and pepper to taste (if required)

Method

Place onion, garlic and ginger into bowl and chop speed 7 for 3 secs, scrape down sides.

Add oil and curry paste, sauté 3 minutes at Varoma Temp  on speed 1.5.

Add tomatoes to bowl and chop 5 secs on speed 5.

Add lentils, vege stock and water to bowl.

Place sweet potato in rice basket and insert into bowl.

Cook for 15 mins, 100, reverse speed 2. After 7 mins reduce temp to 80 (press 80 degrees and temp will reduce).

Remove basket, add sweet potato, pinch of salt and freshly ground black pepper to other ingredients. Mix gently Reverse speed 2/3.

Pour into a bowl and refrigerate, it will thicken as it cools.

Serve with Pitta Bread Wedges, savoury crackers or crusty bread.

Can be served hot as a main meal with rice and pappadums. Or use as a side dish with your favourite curry.

Adjust curry paste to your chilli taste buds.

    Tried this today, and it is pretty good – had it as a vegetarian main with rotis, but my sweet potato took almost twice as long as recipe suggests to cook, and I thought the pieces were pretty small. Will try it again .
    Also, what is Varoma Temp 3 – the temp 3 bit??

    Hi Heidemarie, I have just amended this recipe as that is a typo, thank you for drawing my attention to this. I too have had a similar experience with this dip. In fact also with the sweet potato and macadamia dip. I now am currently in the habit whenever I am roasting in the oven to put an extra tray of sweet potato or/and pumpkin in and roast off and then store in the fridge to add to these style dips. I can say for sure this dip is excellent using pre roasted sweet potato. (clearly you skip cooking them in the basket) and add them to the lentil mixture. Great to see you using the site Heidemarie.
