Profiteroles – Gluten free

Ingredients

• 250g Water

• 120g Shortening

• 70 grams Potato Starch

• 90 grams Rice Flour

• ½ Tsp Salt

• 1 Tblsp Sugar

• 4 Eggs (can use egg replacement eg. “Orgran” no egg)

Method

Add the water and shortening to TM Bowl, mixing 4 minutes, 100 degrees. speed 2.

Add flour, sugar and salt, mix for 10 secs, Speed 8 and reduce to speed 3 for 10 secs.

Allow to cool before adding the eggs one at a time onto rotating blades for 2 minutes on speed 5.

Pipe out the mixture, 2 Inch round and 1 ½ inches high onto a cookie sheet.

Place in an oven and bake for 20 minutes at 220°C, then reduce to 180°C for 20mins.

Makes 8 – 10 Profiteroles.
