Chicken and Cashew Salad


Cooked Barbecued Chicken break into small pieces or slices

Gourmet (mixed) Lettuces

Carrots, Yellow and red Peppers (Capsicums) cut into thin strips

Red (Spanish) Onions sliced thinly (not in rings)

Button mushrooms thinly sliced (fresh not tinned)

Bean & Alpha sprouts (optional)

Avocado sliced




3 tablespoons sweet chilli sauce

4 tablespoons white vinegar

4 tablespoons of olive oil

1½ teaspoons of mustard

2 tablespoons of honey

Salt & cracked black pepper

Combine all ingredients in a screw top jar or shaker, shake well.

Pour over salad and toss through

TIP: The dressing is delightful on any salad, and makes a great gift if you fill an oil bottle.
