Confetti Salad

Ingredients

1 large continental cucumber cut into large chunks

1 medium sized red capsicum quartered and deseeded

4 stalks celery cut into large chunks

60g white vinegar

1 x 440g tin pineapple pieces in juice (not syrup)

1 x 425g tin corn kernels, drained

Sugar & Salt to taste

Method

Place cucumber, capsicum and celery in TM bowl and process for 4 seconds on speed 5.

Add vinegar, pineapple including juice and corn to TM bowl and mix for 5 seconds on REVERSE speed 3.

Season to taste, decant and put in colander to drain off all excess liquid. This salad keeps very well in the fridge for 2-3 days – just keep draining off any excess liquid.
