¼ white onion
1 clove garlic
2 medium carrots, roughly chopped
1 green apple, skin on and cut into quarters
2-3 tbsp olive oil
Pinch of rapadura or raw sugar
Salt and pepper to taste
Juice of ½ orange
400g sauerkraut (see method below)
Place onion, garlic, carrot and apple into the TM Bowl and chop for 3 seconds on speed 6.
Add the rest of the ingredients and mix to combine for 5 seconds on Reverse + speed 3-4.
Chop a small fresh cabbage and shred a carrot and place together into large bowl. Sprinkle generously with salt, cover loosely and allow to sit for several hours.
Once the liquid from the vegetables has started to gather, layer them into sterilized jars and pack as tightly as possible, filling the jars up with drained liquid. Seal jars and leave out at room temperature for several days until fermentation occurs. (Winter 5-6 days, Summer 3-4 days) Place in the fridge and use as needed.
