Carrot, Sultana and Cashew Nut Salad

From the Back to Basics Cooking Class

Ingredients

• 6 large carrots peeled and cut into chunky pieces

• 100g cup Sun-dried sultanas

• 120g cup cashews (raw or roasted)

• ½ cup TM mayonnaise

Method

Place the carrots in the TM bowl and chop for 3-6 seconds on speed 6-7. (Depends how fine you like your salad.)

Add the TM mayonnaise, the sultanas and the cashews and mix together for 5 seconds on Reverse + speed 2-3. Serve chilled.
