3 cups mixed dried fruit (use a good quality packet mix or make your own)
125 ml water
125 ml whiskey, sherry or orange juice
1 cup dark brown sugar
150 gms butter
2 tsp mixed spice
1 tsp bicarb soda
Place all the above ingredients in TM bowl. Cook on 100 degrees, 7 minutes on REVERSE and
Allow mixture to cool completely, then add:
2 beaten eggs
1cup SR flour
1 cup plain flour
Mix on speed 3, REVERSE for about 10 seconds
Scrape mixture down and check it is mixed thoroughly. Usually a quick stir with the spatula is all that is required to finish. DO NOT OVERMIX! Place mixture in 25 cm square or round tin, greased and lined bottom and sides with baking paper. Bake 65 minutes in moderate oven until skewer comes out clean. This mixture can also be cooked in 6 small cake tins which are available from some supermarkets and specialty kitchen stores. They make beautiful gifts, wrapped in cellophane and tied with ribbon. Small cakes take about 45 minutes or a little less to cook.
After cooking, brush top and sides of cake with more whiskey or sherry. Allow to cool, then wrap carefully in foil and keep in a cool, dark, insect-proof container/place.
