Makes 12 big cupcakes or 48 mini muffin size.
100g brown sugar
1 tsp finely grated orange rind
500g dried mixed fruit
80g orange juice
70g plain flour
70g self-raising flour
½ tsp mixed spice
Preheat oven to 170 celcius.
Chop walnuts on speed 4 for 5secs. Then put this aside. Zest enough orange peel to make up 1 tsp, speed 7 for 20secs.
Cream butter, sugar and orange rind in TM until pale and creamy, 30 secs on speed 4. Add eggs through the lid, one at a time, on speed 3.
Stir in dried fruit, walnuts and orange juice on reverse, speed 3 for 3 secs. Stir in both flours and mixed spice on reverse, speed 3 for 10 secs.
Spoon the mixture into the lined patty pans and smooth the surfaces. Bake for 15mins or until cakes are firm to touch.
