Lemon Macadamia Cookies

Ingredients

210grams Macadamia Nuts

180grams Brown sugar

110grams Raw sugar

110gms Butter (room temp)

130gms Philidelphia cream cheese (room temp)

300gms Plain flour

2 tspns lemon extract or lemon juice

1 large egg

½ tspn Bicarb soda

¼ tspn Salt

Method

Pre heat oven150⁰, makes about 32

Place Macadamia in TM bowl chop speed 4 for 20 seconds set aside.

Place sugars in TM bowl mill speed 9 for 15 seconds.

Add butter and cream cheese, speed 4 for 10 seconds add egg and lemon extract through the lid while running speed 4 for 10 seconds.

Add flour, salt and bicarb soda to TM bowl mix on speed 4 for

3-5 seconds until just combined use spatula to aid you.

Place heaped tablespoons of mixture on to greased baking trays and bake for 20-30 minutes or until lightly browned.

Immediately transfer to cool on wire racks.

Tip

Try other nuts for flavour

    It’s not clear when to put the nuts in. I added with the flour.
