Pastry Bases Ingredients
125g caster sugar
300g plain flour
75g self raising flour
Pre-heat oven to 200 C.
Put all ingredients into TM bowl and mix for 20 seconds on speed 5.
Turn mixture on floured bench and knead lightly.
Put in plastic bag and in refrigerator for 1 hour.
Roll out to 2mm thickness and use 6.5cm round cutter to cut bases.
Place in greased mini tart bases and blind bake in oven for 20 minutes until golden.
Lemon Butter Ingredients
150g lemon cut in quarters
150g caster sugar
3 egg yolks
Place lemon and sugar in TM bowl and blend for 30 seconds on speed 9.
Add eggs and cook for 7 minutes at 60 C on speed 4 until thickened.
Add butter through hole in lid in last minute.
Pour into cooled mini pastry bases.
6 egg whites
200g caster sugar
1 teaspoon of gelatine
Insert Butterfly and place all ingredients
into clean Thermomix bowl.
Beat for 4 minutes at 50 C on speed 4 until stiff.
Pipe meringue over top of mini lemon
pie and put under grill for few minutes
until peaks turn golden.
Makes approximately 50 mini tarts
