Ingredients
1 tbsp Vegetable Oil
1 large Onion (chopped)
2 cloves Garlic
1kg Lean Minced Lamb (Beef if preferred), mince in Thermomix
2 tsp Ground Coriander
1 tsp Paprika
1 tsp Ground Cumin
85g fresh White Breadcrumbs, made in TM
2 tbsp White Wine Vinegar
2 Eggs
4 tbs Sultanas
4 tbs Apricot Jam
Salt and Pepper to taste
Topping
2 Eggs
200ml Double Cream
1 tbs fresh Coriander Leaves
Coriander sprig to garnish
Method
Line a 23cm/9inch loose bottom cake with non-stick baking parchment. Preheat oven
to 180°C (160°C fan forced oven).
Place quartered onion and garlic cloves into TM bowl and chop for 5 seconds on
speed 7.
Add oil and sauté for 3 minutes at 100°C on Reverse + speed 1.
Add minced meat and cook for 7 minutes at 90°C on speed 1 or until meat has
browned.
Add spices, breadcrumbs, vinegar, eggs, sultanas, apricot jam, salt and pepper to
taste. Combine for 2 minutes on Reverse + speed 4. For a smoother option put
onto speed 6 for 1 minute. Pour mixture into cake tin.
Topping Method
Place topping mixture into TM bowl and mix for 15 seconds on speed 6. Pour the
mixture over the meat. Place baking paper or tray under the cake tin allowing for any
spillages.
Bake for 1 hour in preheated oven. Carefully unfold the Bobotie. Cut into wedges and
garnish with coriander sprigs.
