Quick Vegetarian Nachos

Ingredients

~100gms cheddar cheese

1 or 2 cloves garlic

1 can 4 bean mix drained

Half capsicum, quartered

1 spring onion

3 ripe tomatoes

Salt and pepper to taste if required

1 pkt plain Corn Chips or your own (made from Lunchbox cookbook)

Method

Place cheese in bowl and grate 4 secs speed 7. Set aside.

Place all ingredients into bowl. Set dial to closed lid position. Pulse 2 or 3 times to reach desired consistency.

Place CC’s on a baking tray, spread mix over cc’s, sprinkle with cheese and grill until cheese is melted. (This step can be omitted).

Serve with sour cream or guacamole (Everday Cookbook) if desired.

Tips :

Add or remove veges and adjust quantities to suit your tastes.

Add chilli for a bit of bite.

Can be placed in a lunchbox as a dip with CC’s.
