350g Zucchini, cubed
100g Cheese, cubed
80g Olive Oil or Macadamia Oil
2 Small Carrots
1 large Onion, quartered and roughly cut
50g Maize or Cornflour
70g Plain Unbleached Organic Flour
2 tsp Baking Powder
1 tsp Rosemary Leaves
3 cloves Garlic
3cm piece of Ginger
1 Red Capsicum, roughly cut
Salt & Pepper to taste
Place cheese into TM Bowl and grate for 3-5 seconds on speed 6. Set aside.
Place zucchini and capsicum into TM Bowl and grate for 3-4 seconds on speed 6. Set aside.
Place carrot into TM Bowl. Chop for 10 seconds on speed 8. Set aside.
Place onion, ginger and garlic into TM Bowl and chop for 4 seconds on speed 6 and sauté for 1 minute at 100°C on speed 1.
Add all other ingredients into TM Bowl and mix for 10-15 seconds on speed 4. Use spatula to scrape down sides of bowl.
Bake in a well greased lamington tin or ceramic dish in a moderate oven for 30-40 minutes or until golden brown.
Great to eat warm or serve cold for picnics or lunchboxes.
