Raw Coconut Laksa


2 tablespoons coconut oil

2 baby coconuts flesh and juice

Juice 1 Lime

Handful of coriander roots and leaves (wash well)

Small handful basil

1 Chilli

1/4 teaspoon salt

2 tablespoons tamari

3cm piece of ginger

3 pitted dates

3cm lemongrass (white part)

2 kaffir lime leaves (central spine removed)


Place all ingredients except coconut and juice into TM bowl, blend on speed 9 for 5 seconds or until you can hear everything is ground up

Add coconut flesh and juice and blend on speed 9 for 1 minute

Add water to create soupy consistency and warm for 5 minutes on 37˚ for 5 minutes.

General tips

Try any of the following to serve with Laksa or as a garnish

Red capsicum, shredded carrot, mushrooms, salad onion, cabbage, fresh corn, zucchini ‘pasta’, peeled with vegetable peeler, dehydrated pecans, baby spinach, sprouted peas other sprouts, seeds or nuts.
